Some Words About Rice Kheer
Rice kheer recipe is a creamy, rich, and sweet traditional Indian dessert made from simple ingredients like rice, milk, and sugar. Flavored with saffron, cardamom and dry fruits. Basically it’s a milk based dish. Kheer, also known as Payasam or Indian Rice Pudding. Kheer is the favorite dessert in Indian cuisine and it’s a symbol of love and unity. Rice Kheer is mainly made during festivals and it can be made from both jaggery and sugar. Apart from rice kheer is also made from sago, semolina and samak rice. Usually small grained fragrant rice is used to make kheer, but in some states of India, Basmati rice is also used to make kheer.. The texture of kheer is very smooth and creamy. Therefore, one should use such rice which becomes sticky when cooked and does not separate the milk from itself.
Method – Kheer Recipe (Rice Kheer)
- Wash and Soak the Rice : Wash the rice under running water 3-4 times and then soak it for 15-20 minutes. Soaking the rice will help it cook faster and give the kheer a soft, fluffy texture
- Soake Nuts : Soak makhana and cashew nuts in lukewarm milk for 15-20 minutes.
- Boil the Milk : We will heat full fat milk till it boils and then add rice.
- Add Soaked Rice : Take out 2 tsp rice separately from the soaked rice, we will do it later. Mash the remaining soaked rice with your hands and break it into small pieces. By doing this the rice will cook very quickly.
- Grind Nuts :Grind soaked makhana, cashew nuts, 2 tsp soaked rice and 3 green cardamoms and prepare a paste.
- Add Nuts Paste : When the rice gets half cooked then we will add the nut paste to the kheer. By adding paste the texture of kheer will become very smooth and creamy and its taste will also double.
- Add Saffron Milk : After cooking for some time, add saffron milk to the kheer, which will give a beautiful color and aroma to the kheer and will also taste good.
- Add Sugar : After the rice gets cooked completely, we have to add sugar. If you add sugar before cooking the rice then it will take a lot of time to cook the rice and it will not get the creamy texture and its effect will also affect the taste.
- Final Simmer : After adding sugar, cook the kheer for further 5-10 minutes. If you want, you can add dry fruits like cashews, pistachios, almonds and raisins fried in ghee and the kheer will be completely prepared.
- Serve : Kheer becomes thicker when it cools, hence it should be stopped only when it becomes thick. Kheer recipe (Rice Kheer) can be garnished with dry fruits or rose petals while serving. Rice Kheer is usually served cold. but few people like this light hot.

Note
